You are invited to: Meet the Maker – FRESCO CHOCOLATE

Fresco-XoxolatCome taste the difference the maker makes!  Through his small-batch processed chocolates, Rob Anderson, Engineer by day & Chocolate Maker by night will be using his chocolate to demonstrate how bean choices, sugar %’s, roasting, & conching affect overall experience of chocolate.

Come taste the difference the maker makes!  Through his small-batch processed chocolates, Rob Anderson, Engineer by day & Chocolate Maker by night will be demonstrating how bean choices, sugar %’s, roasting, & conching  affect overall experience of chocolate.

1-2pm  Cocoa Roasting 
A chocolate journey through three unique cocoa origins highlighting how chocolate flavors dramatically change with different cocoa roasting levels. Participants will sample chocolate from different levels of roasted cocoa, created from single origin Dominican Republic, Peru and Papua New Guinea cocoa.

3-4pm Chocolate Conching for Flavour
Conching is the final flavor developing step when making chocolate.  The best way to understand the effects of conching on chocolate is to taste chocolate conched at different levels.  Participants will compare chocolates conched to different levels from each of three origins: the Dominican Republic, Peru and Papua New Guinea.

4:30-5:30pm Cocoa Percentage and the Elusive Terroir
What does the percentage on a chocolate bar really mean and how do you know if different bars with the same percentage are comparable?  We will explore chocolate percentage by tasting different percentage chocolates made from the same cocoa.  Next, we will explore the terroir of chocolate by sampling chocolates made with identical recipes and cocoa origins but from two different cacao harvest seasons.  The results will surprise you.

All Fresco bars are dairy free, nut free, soy free and gluten free.

Whisky & Chocolate 101 – The Spirit of Chocolate

Start your evening out in a perfect way! To experience the wide range of notes in either Chocolate or Whisky, they must be enjoyed alone. But we believe that 1 + 1 = 3 when they are enjoyed together. We will walk you through how chocolate is different depending on the bean, where it’s from, & who makes it into chocolate. Marcus will guide you through the wide range of whiskies from beginner to super-peat.

Victoria Whisky Festival

You’ve heard of wine and chocolate, but have you opened up your senses to whisky and chocolate? In this grand tasting, UK based, but Canadian bred Miss Whisky founder and editor, Alwynne Gwilt, will guide you through a series of fabulous whiskies, while Vancouver based chocolate maker Hodie (Heather) Rondeau will teach guests about the history and joys of chocolates showing there is much more in common between chocolate and whisky than one might guess. A sensual, tasty evening, the aim will be to have fun; to eat, drink and be merry.
